I just made the stuffed Backstrap and this is what I do with the small ends.
Cut backstrap small ends into 1/2 in thick medallions
salt & pepper
sprinkle garlic salt
dip in milk & egg wash
smash flat in crushed Ritz Crackers
I use regular all the time but tonite I had the Brown Sugar Cinnamon
Fry in hot butter or bacon grease
I'll tell ya...this is just like a dessert!
