    Parmesan Crusted Tilapia

    This is one of my new apartment-cooking favorites. I don't have much of a recipe, at least in terms of measurements. I just dust a couple of fillets with garlic powder, lemon pepper, a bit of Italian seasoning and liberal amounts of parmesan cheese. You can add bread crumbs too and substitute cracked pepper and lemon juice for the lemon pepper if you would like. Put these in a pan coated with olive oil and bake at 425 for 20 minutes. While that's cooking, I saute mushrooms and onions with butter, a combination of spices (whatever you like, I use garlic powder, pepper and a little Lawry's seasoned salt) and a splash of spiced rum. The fish and the mushrooms/onions are usually done about the same time. Serve it up with some potato chips or some bread and enjoy.
