    Texas Snapper…It’s What’s for Dinner

    My husband went fishing down at the coast recently. He caught a boat-load of snapper and one hammer head shark (I told him NOT to bring that thing home!).

    Since we like to eat lighter meals during the summer, I made an appetizer of Fried Snapper with Remoulade Sauce, a recipe I came across on Hank Shaw’s website. It was so good my husband said to me, “Don’t get rid of that recipe.”

                  That's awesome. Headed to the coast Monday and hope to catch some flounder, snapper, etc. Fresh fish tacos will be the first choice on the menu.

                          Yep. And while my expectations were slightly low, I have to say, they made an excellent crust. I need to tweak the seasonings a bit but I would use it again over a flour- or cornmeal-only breading any day.

                          The fruit was a spicy melon salad, harkening back to an early suggestion for melon with Tijín. Plan to try that next.
