Must be nice. I've never had decent brisket.

I even tried to smoke one myself last year. Followed Franklin's instruction to the T. It sucked. It tasted like smoked dry roast beef.

    Pork is king.

Everybody know the most important ingredient for a good brisket is a Texas breeze on the fire. Gonna make things pretty tough out in Georgia.

Can't cook a brisket. Says pork is king.

What does this tell us kids?

        Lol.

You didn’t follow it to a T or it wouldn’t have sucked. [emoji6] Prayers sent on never having a good brisket.

If at first you don’t succeed, cook something that anyone with a pulse can cook? [emoji6]

Spot on good traditional bbq. Good stuff.

              Hipster BBQ: not a fan.

Favorite Austin joint is Stiles Switch but they can sometimes lean too far Hipster

              Going to DFW next week

              Recommendations?

I've done Pecan Lodge and Hard 8

If on a Thursday or Friday, during lunch only, go to Cattleack BBQ in Farmers Branch (North Dallas)

407BBQ as some have already mentioned

Hutchins BBQ. I can only vouch for the McKinney location but there is one in Frisco.

Panther City BBQ if you are in downtown FW

Rusty Buckle and Corkscrew have been tops for me. Was disappointed last time I went to Luling but still bought a quart of sauce

What is "Hipster BBQ"? I think I know but need clarification.

Hey! I cooked pork long before I didn't succeed with beef.

Apparently it was the lack of a Texas breeze that did me in.

On a serious note, I'm going to give brisket one more chance to shine. I'm also going to smoke the flat and point separately. Basically, cut it in half and pull the flat when it ready and let the point ride until it's ready. That should take some of the witchcraft out of it.

If you think there's witchcraft involved, you're over thinking it.
