    Breakfast sausage question

    Well I appreciate the other threads advice so how about another one.
    I have a packet of see easoning for breakfast sausage. Calls for 20% pork...all I have is beef fat...will that work? I know it will not be like typical sausage

    As long as you get the fat content correct, I dont see why not. I've had beef chorizo that was great.

        I love beef fat. It is a bit sweeter. That is what is use for my snack sticks. I will admit i use too much fat in it also. They look like they had crisco wiped on them on the outside. But dang NO ONE has complained. Beef fat is amazing.

            Just finished.
            Made 5 pounds of LEM Hot breakfast with about 25% beef fat.

                  I had to order it however I believe there are retail locations. I got breakfast sausage, boudin and bean seasoning. All has been better than expected.

                      One sloppy quick fix for some venison breakfast infused sausage! Find another already prepared sausage you like. Grind some deer and mix it up. Fry it. You just leaned and improved your grocery sausage. Added a lot of what you would if building from scratch and it usually tastes good. Good breakfast fast and easy (and Cheap). I also simply chopped up bacon, added a few spices I like and ... not too bad.

                        And do not use the ears and nose and other related parts I will abstain from mentioning. Save that for the wieners.
