    Brisket cook

    Thinking of cutting brisket in half to shorten cook time. Yes or no

    Not sure you'll gain as much time as you are thinking, but you might try searching for "hot and fast" threads. TC might chime in and help you. That being said, I enjoy cooking briskets because of the time it takes.

        When you say cutting in half, are you talking about separating the flat from the point?

                    Wrap it for n foil after it has smoked for about 3:00 hrs. It will reduce the time to about 6 hrs. And you can bring it into the house and put it in the oven where you have more control of the heat. If I'm running short of time that's what I do. Get the internal temp up to 190 and then put in an ice chest to keep it warm. Wait one hour and it will be good.
