    I like to fillet it out, unrolling it as I cut. Ends up as a couple flat iron looking steaks. Marinade in Worcestershire and brown mustard, season like a steak and cook to med rare on a hot grill.

    I would definitely cook wild pork well done. Modern, high quality, farm raised pork is another story.

      you don't have to cook pork well done anymore.

      Revised cooking guidelines for meat were released by USDA. What does this mean in the kitchen or at the grill?

        That's for commercial pork, rare wild piggie is just asking for trich.

        Venison heart is one of my favorite meats, I've only had one wild pork heart and it was tasty too, but I was so hungry I dug it out of the gut pile at GRXH so that might have effected the flavor.. lol
