        Never tried it but have seen a few ways they cook it in Oaxaca and I bet it taste good, but anything would cooked like that.

                              The ranch foreman trapped them and cleaned them for us. We usually bring them beef of some sort so he traded us for some armadillo

                                It's good man, taste and texture are kinda like pork.

                                I sauteed the backstraps (if you can call it that) out of mine and it was really close to pork loin, maybe a little sweeter.

                                It's good stuff, just wear gloves when you are cleaning them haha
