    I've also brined and smoked the breasts before. It turned out excellent. Just takes a little more prep time than frying so I usually go that route.
    We use the same recipe from Meat Eater and it comes out really good.

      Brine:


      Then cut into strips. I usually run the strips through the tenderizer, flour, egg wash, and then flour, followed by frying.

      To finish it off, get you some of this. Incredibly good…

        1 cup kosher salt
        1 cup sugar
        1 gallon water
        Mix and brine a few hours or overnight
        Season how you like, garlic powder onion powder
        Paprika but nothing with salt cook on grill till
        Internal temp 148 let rest 30 minutes.

          cut cross grain, bread, fry. Don't overthink it. Dip in honey and/or mashed taters. Shoot more turkeys....

              Sous vide at 145 degrees for 12 hours.

                  Chicken fry. Or take breast cover in Mayo, season heavy with a peppery beef seasoning and smoke at 250 until 160 internal and then pull and let it rest

                            Use to just do turkey nuggets, cube then fry. Then I brined and smoked one, probably the only way I’ll do it from now on
