    Live Attempt at Beef Ribs

    The twins came home from TAMU this weekend and I’m having some work done on the farmhouse, so we stayed home rather than going hunting. Nothing on camera that I’m excited about yet anyhow. Jennie was really happy to see her babies, so was I, and she scheduled a Sunday Supper for the whole Famn Damily. That means I’m cooking meat.

    I decided to try something that I’ve never attempted before: Large Beef Plate Ribs. These “Dino Ribs” from HEB looked too good in the meat counter to pass up, so I got a mess of them. They’re all about 2lbs each and I got 9 of them. I reckon a lot of that weight is bone, but they’re meaty ribs.

    I gave them a nice light coating of Louisiana Hot Sauce, as a binder, and coated them liberally with Pink Himalayan Salt and Course Black Pepper. They sat like that in the fridge all night and I took them out this morning to get them to room temp.





    Preheated the Traeger to 225 and put them on about 9am. Plan is to cook them for about 4 hours and then wrap them in butcher paper for a couple more hours, before putting them back on directly for a last two hours. That’s the plan, but I’ll let the ribs determine whether I have a good plan or not.

            Looking good at 4hrs in. Internal temp is 158-164.




            Wrapping them in butcher paper for a couple of hours.

              I spritzed them about every 30min with a 50/50 mix of Apple Cider Vinegar and Modelo Cerveza during the initial 4 hours.

                  Yessir. They were pre-cut and the membrane already removed. For what they cost, they should have come seasoned, cooked and on my plate next to some mashed potatoes.

                        Didn't this used to be a "trash cut"? Rebrand them "Dino Ribs" and suckers like me buy all they have.

                            Nice looking ribs. I bet they taste great!

                            My son just got home from TAMU for the long weekend. I'm making the squirrel and gravy posted in the other thread (only using chicken thighs instead). Looking good so far.
