See if there is a concert at Red Rocks you might like. Awesome venue.

Going to be tons of snow still in the mountains in early May.
Come see Wyoming and avoid all the crowds in Colorado.
VeeBar guest ranch has great cabins to stay in outside Laramie. Snowy range is just down the road.
Avoid I-70 on Fridays or Sundays if you go to the mountains there, traffic will be terrible.
Elk at Estes Park will be fuzzy antlered by May.
Red Rocks concerts will be sold out if they're any good.

May will still be fairly cold and snowy, plan accordingly.

Plan is to go to Wyoming later in the year and hope to get some duck hunting in or possible big game hunt if I can convince the wife.

Since she already bought the tickets for CO, we are pretty set on that.

Any other recommendations on places to eat? (I have to stay away from that devil lettuce, could get me in some serious trouble at work)

Santiago’s is a Mexican fast food joint. Normally I don’t eat Mexican food anywhere but south Texas and the Permian, and I’m a big fan of this joint. Awesome green Chile. Some locations their Chile isn’t too warm, and others it’ll light you up. I say this being a fan of hot stuff.

5701 Leetsdale Dr is my favorite location. This location has been pretty warm every time I’ve had it.

Forgot the Cherry Cricket is a pretty good joint to check out. Burger joint with some **** good burgers and drinks. Take an evening to take the wife here, and let her wonder around Cherry Creek. Good shopping scene for women with good restaurants and bars.

When you’re in Denver you gotta try out Casa Bonita, especially if you’re a South Park fan. It’s kind of like Pancho’s but with entertainment. The food isn’t great but it’s an experience for sure.

If you make it up to Ft Collins for beer eat at Rio Grande for mexican food.
Tons of breweries in Ft Collins now and good food. If you could wait til school is out at CSU way less traffic and people.
Buckhorn Exchange for a steak in Denver.

My family really enjoyed Dinosaur Valley.

Estes Park and RMNP. It's worth the 1-2 hour drive.

I only ever fly into Denver and never really stay there so no help in town, but if it were me, I'd either head up to RMNP, or go over the mountain to Dillon/Silverthorne/Frisco/Breck. Absolutely tons to do and see there....
