    Raspberry/Chipotle glazed pork loin

    Had a loin in deep freeze off of a Duroc show pig figured I’d try this out

    Used a liberal amount of a Raspberry/Chipotle sauce that I picked up at H‑E‑B.

    After the loin was trimmed and cleaned up, I used my injector to inject the sauce all through the loin.
    Placed the loin in an aluminum pan and poured the sauce all over it

    Set the smoker at 240 degrees and placed it on the lowest rack. Put the temp probes in, closed the lid and walked away until the internal temp was 135 degrees.
    Removed it from the pan, opened the flame cover so I could have open direct flame. Turned them temp up to 400 degrees and basted with the sauce until it started to caramelize a bit and the internal mat temp was 150 degrees.
    Total cool time was right around 2 hours or so
    Pulled it off and let it rest for 10 minutes while I put the asparagus wrapped in foil and seasoned with olive oil, sea salt, garlic and onion powder

    Paired it with the asparagus, some squashed taters and an ice cold Shiner Sea Salt & Lime cold beer

    Even broke out the fine China

        I've tried it as well, and I should admit - it has pretty unique taste, I like it.

                  that sauce is really good over cream cheese with crackers
