    Triple B! (Blazed Bear Backstrap)

    Blazed Bear Backstrap

    1 bear backstrap, trimmed and cut into 4 steaks
    1 Tbs olive oil
    2 Tbs soy sauce
    1 Tbs fresh course ground black pepper
    1 Tbs turbinado sugar
    1/2 - 1 Tbs Ragin Blaze

    Combine all ingredients and let marinade for as long as 8 hours.

    You can grill this and it will be excellent. However, I got a large cast iron skillet smoking hot on the range top and seared the steaks for 2 mins each side, then moved the skillet into a 450° oven for 8 more minutes for medium rare. Once out of the oven I dropped a spoonful of butter on each steak and sprinkled the top with more Ragin Blaze. Served with baked sweet potatoes.
