Austrian winter peas/ How Long

I have a great stand of winter peas in one of my plots. The deer have not been hitting them hard yet. How long should I let them go before I disc then under? Will they make seed?

Don't disk them under until you need to plant something else. THey will go to seed and be beneficial to wildlife, but will not re-seed themselves.
