    Silver skin

    I see alot of receipes saying to remove the silver skin. What is the purpose?

      what kinda meat are you talking about?
      if you are talking about deer meat that silverish film will be tough to chew thru. it's kinda like sinew, what the Native Americans made their bow strings out of.

                If you’re smoking them it makes a barrier that the smoke has trouble getting through. And it’s a bit tough to chew through.

                      It’s the tough lining on the bottom side of the ribs. Pull it off before smoking

                        Also, it shrinks when cooked pulling the meat tight and making the meat tough.

                            I never remove it from my ribs and I’ve never experienced less smoke flavor, tough meat or anything else negative. Mine taste just like everyone else’s that does remove it. As far as being tough to chew...there’s no meat on that side of the rib so no one eats it. I’ve smoked a lot of ribs in my day and nobody has ever complained about the silver skin being left on and everyone comes back for more.
                            Waste of time in my opinion.
