JTS, that does sound like a great way to cook them! One really simple, but good recipe I often use is:
- brown whole tenderloins slightly and quickly on all sides in unsalted butter -- a good bit of butter
- add enough Jack Daniels to cover about halfway up on tenderloins, cover and simmer for 10 minutes
- remove tenderloins, slice into medallions (with angled cuts) and place back in skillet to re-heat
- serve (with plenty of cooking juice) and enjoy!
