    cured smoked Backstrap recipe

    Anyone have a cured smoked Backstrap recipe?

    I’ve had smoked beef tenderloin this way served cold and it’s delicious. I was thinking of making it with a of Backstraps

            The stuff I've done hasnt been. I slice it against the grain like you do a brisket. Last time I also sliced a couple chunks off a hogs hindquarter and did them the same way. That might be better than the deer. Its really good!

              I do all my backstraps that way now.
