We stayed at the Four Seasons in Punta de Mita a year or so ago. Not sure it is a full all-inclusive, but it was for us on our company trip. Beautiful place, secluded, views for days. Water was rougher for us when we went, waves were spectacular. Awesome pool, friendly staff and great food. Loved it!

I am sitting in Secrets Akumal Riviera Maya right now. Awesome beach. Small resort and adults only. Right at the area where large turtles can be seen while snorkeling near shore. I am here with my company on a trip that we have to earn yearly. Brought my daughter because she is graduating this year. Sure wish it was my wife, but we have had a good time. Food has been good. Staff has been awesome.

Ive stayed in numerous all-inclusive resorts in different areas. If you are not taking any kids Sandals is hard to beat- St Lucia is great and all three of the Sandals resorts there are first class. Sandals in Nassau is busy but still very relaxing and first class and you are in town. I would first decide what type of area you want to go. If you want sand beaches, jungle, rock beaches etc. Narrow that part down and then look for a resort.
