    Pressure canned bacon

    I came across a canned bacon product the other day and decided I’d try to make my own. Several videos on YouTube with some canning it raw and others about half cooked. I decided the half cooked was best because the raw process fills the jar with bacon grease and leaves the bacon really mushy.
    So, I’ll update tomorrow.

      They are in the pressure cooker now, I’ll take pics later of the jar after the canner and probably tomorrow when I open a jar to eat.

            Pre cooking it half way kept the grease to a minimum. Perfect seal so it should be good for years.

              Now that's a new one to me. Might have to try in with homemade bacon. Thanks for the idea!

                    Home cured bacon will be next. I wanted to try it now and don’t currently have any bacon cured.
                    I just rolled up the bacon in the second picture, not individually wrapped. And you must use parchment paper from all the videos I’ve watched.

                      4 lbs made 6 pints with about 12 prices per jar.

                        I used to buy canned (tin can) bacon to take to fish camp in Alaska. That was 25 years ago and I probably still have some of the excess salt running thru my veins!

                          Bacon is one of the few things I haven’t pressure canned.

                              Probably didnt need to go that long with them being half cooked already but thats how long i do all my meat thus far
