      Grew up eating fish fried in cracker meal. Not sure why we ever stopped.

      The last batch of fish I cooked i used ‘hot rise’ corn bread mix because there wasn’t anything else in the store. It was fantastic. I added a touch of garlic and onion powder plus salt.

        This thread has inspired me to thaw out 20 crappie fillets for a fry tonight.

        I'm in the straight cornmeal camp. Aunt Jemima Yellow Cornmeal, press the fillets into the cornmeal one at a time and then drop into 375 oil. When the fillets come out of the fryer I hit them with sea salt.

                        Whats the mustard for in some peoples recipes? Just to get the cornmeal, flour to stick to the fish?

                          Being from south FL cornmeal was never used for fish fries nor was catfish.

                          I used a variety of batters, usually start with flour then egg wash, sometimes no flour just the wash. Then, mix of cracker meal, bread crumbs, a little flour and onion powder, garlic powder, black pepper, never salt.

                          Salt fish as it comes out of the fryer.

                            Yes. All i do is rub some mustard on the fish, dip in some yellow corn meal, drop in some good hot grease, wait until golden brown, and pull.

                              Made crappie tonight with cornmeal and my homemade habanero powder mixed in. Dipped in wing sauce was a nice treat.
