    Processing - back strap?

    Do you guys freeze them in chunks (roast like) or slice and freeze (patty like)?

        I cut em in half to freeze and then cut pieces when ready to cook

          Slice, tenderize then freeze. Just fried up a few pounds lastnight

            If I want chicken fried, I slice.
            If I want to stuff and rap with bacon,I cut 8in hunks.
            If beef tip style, I cube.

                Some I cut up and then run through a tenderizer for chicken fried backstrap.

                Some I cut into streaks that I'll grill (butterfly them open).

                  I'll freeze halved with the silver skin on. They get vacuum sealed

                    I like to cut whole backstraps into thirds and freeze individually. Makes packages of 2-4 servings; depending on how I want to prep each third.

                        We slice in half, cut into 4” pieces, sprinkle tenderizer, vacuum seal, defrost, flour, fry, cream gravy, and then enjoy!!!

                            Just had steaks off the grill last night. I turn mine into pepper bacon-wrapped individual steaks. Wrap in clear celo-wrap, put in zip-lock bag and freeze. I have also done the tenderize and do chicken-fried as well.

                              Boy y'all trippin. Leave whole or cut in half. Smoke to medium rare. Serve with chunks of cheese and jalapeƱo slices.
