Default Homemade beef enchiladas for dinner

My wife is making her enchiladas for dinner. Here’s a teaser of what she’s doing. homemade enchilada sauce some ground beef and some spicy Spanish rice. I’ll post some enchiladas as she rolls them.

Chile powder, garlic salt, onion powder, salt, pepper and flower and water to thicken the sauce. Once the sauce thickens add water to make it a little runny to poor over you enchiladas. I’m not sure on how many teaspoons of ingredients she used. I’ve never seen here use a teaspoon to measure her ingredients.

We're having the same exact thing! Except my mom came to visit grandkids and I convinced her to make them before she left.

Cheese enchiladas with chile con carne and onions with rice and beans might just be the greatest plate of food on earth when done right.

Herbert's Taco Hut made. Lol.

I make some good ones too but not often. Too much work. Good recipe for chile gravy on the homesick Texan website. I add chopped tenderized flank steak.

Man that looked so good I had to try something I've wanted for a while.

Thanks for the inspiration.

Southwest enchilada casserole with venison. It really should have pulled chicken or pork but I wanted deer.
