So, I’ve fresh water fished many many times and I enjoy it but the only fish I’ve ever liked were catfish.
Everything else just tasted fishy to me so I’ll catch them but I won’t eat them. This afternoon we cut up our haul from yesterdays trip but paid close attention to cutting everything “red” out of the meat and BAM! Wonderful fried fish nuggets! It could also be that some of my taste buds aren’t the same since the Rona. I couldn’t even smell the fish being cleaned lol. Either way today, they’re fantastic! Had many a fish fry for lots of people with just white bass. You got it, cut the red meat out and they are fine eating. I like the way they fry up crispy too.

Not a big fish person to begin with, but I busted out the cast iron and put some rendered bacon fat in the pan, seasoned the sand bass with Traeger's Blackened Saskatchewan seasoning and put it straight into the pan...pretty good stuff!

Sandbass are fine. I prefer crappie for Texas freshwater fish, but there isn't anything wrong with fried white/sandbass with the red cut out. Very nice white firm flesh. Wife won't eat any fish with the red in it, so its an automatic cut out for me.

Same here, that's the only fish we ever ate growing up. My dad loved sand bass fishing and we would clean hundreds per day, before limits, on Lake Buchanan many years ago. We never cut the red out of them when I was young. I do cut red out on stripers and hybrids, and now I cut out most of the red on white bass. Instead of cutting completely against the skin, I'll stay about 1/8" to 1/4" away from the skin leaving the red meat on the skin. Then cut the red lateral line out and that's it. |

American Shad are very good to eat, but they are a pain due to being so bony. They spend their life in the sea and run upstream to spawn in the spring. We catch them on mini silver spoons and shad darts. They weigh 3 to 5 pounds and are found along the coast from Florida to Labrador. They put up a heckuva fight on ultra light tackle.

Mud/dirt bottom freshwater fish can pick up that aroma. Sand bottom lakes like Livingston the fish are clean and delicious.

I’m easy. Bass, catfish, crappie, whites, perch, etc all are fine with me. Probably has something to do with the alcohol intake at most fish fry’s I am at but I love fried fish and not too picky about it. Salt water fish I typically like grilled, blackened, etc.

I can't tell you how many times I have fried white bass and "tricked" people into thinking it was something else. They will always ask the species and I just say it's something like catfish, or crappie, or black bass, ect. They will inevitably talk about how they hate white bass, blah blah blah... And then they go back for seconds, and thirds. I've also heard the "ya they are ok if eaten fresh, but they suck if you freeze them" argument. That's just as false. They are dang good to eat.

I like crappie the best I think. I'll eat just about any fish if it's cooked right. I even like drum if it's deep fat fried. Only fish I've tried that I didn't care for was carp and gar. But we may not have known what we were doing when we cooked it.

![]() Like most others, I prefer crappie over white bass, but still like them. I take the red line out, but that is my personal preference. I use a razor knife and have gotten pretty good at it after doing hundreds.

I've filleted about 200 of them this year. I cooked up about half of them and gave the others to some friends. I don't bother with trying to trim a little red meat out. When I have 100 fish to clean I'm not wasting my time, and I've never had anyone complain.

For the wife....the red line is not about the fishier taste. It is the gray looking flesh when its cooked. She says it grosses her out Same thing with striper and redfish for that matter. If she is served redfish on the halfshell you can watch her carefully remove the top layer to separate...
