    Cooking elk

What are some of your favorite recipes for cooking elk. I just got my bull back and my gf has never eaten elk before. I’m trying to find a few new ways to prepare it. I’ve got roasts, steaks, bone in shanks, ground, and whole tenderloins. LOTS OF IT

I marinate the steaks in Teriyaki for a while, for flavor and keeps it moist, then toss on a hot grill with garlic salt. Good stuff!

The best way is to have the postal workers tenderize it on its way to my house. That's step 1.

I just made some elk stew night before last. Did a pack of ground and some 1” cubes and followed a beef stew recipe from online. It turned out **** good. Hard to beat a steak on a hot grill. My MawMaw makes elk salad (like chicken salad) out of the neck meat and that stuff is legit! Following along for ideas as well

Steaks medium rare to rare - do not overcook

Slow cooked roast options (crock pot) - Barbacoa or with root vegetables

          Or as traditional roast sliced

Need to just consider it as a better than beef option and cook in same ways

I have elk tacos once a week. I just cook up some ground just like a taco meet. Fry some corn tortillas and street tacos all day.

Here’s a link I did the spicy orange marinade a couple weeks ago. I would use 1/2 the red pepper next time.

                That looks good.

                I fixed a 6oz tenderloin last night.

Salt, pepper, rosemary, and 1 table spoon of melted butter.

Sear the steak in a frying pain for 6 minutes. Then coated the steak with the mix. Put in the oven at 450 for 5 minutes. Made sure the internal temp was above 130.

I sauteed zuccini in the frying pan with 2 tbsp of butter. Then pulled off the fire and covered the top in parmesion shredded cheese.

Put the tenderloin and zuccini on a plate, and pour all the drippings over the tenderloin.

Just like any other red game meat. Cook as rare as you can and enjoy. I like a coating of olive oil then salt and pepper. It is very rich in my opinion. I prefer it to beef. I’ve never had a rutted up bull just a few cows though

Cook your steaks rare to medium rare, you will be sad if you overcook them.

Slow braised roasts are awesome too

I like to add some dukes mayonnaise, and tomatoes on my elk tag sandwich when I eat it.

Hank Shaw osso bucco for the shanks. He has multiple styles

Seared steak or tenderloin with whiskey butter sauce from meateater, calls for heart and coffee seasoning but I used backstrap and traeger prime rib rub instead. https://www.themeateater.com/cook/re...-butter-recipe

Beer and wine braised neck roast from field to plate makes a great lettuce wrap with sliced avocado and siracha. https://fromfieldtoplate.com/2019/01...on-neck-roast/

not sure, but I've tried eating my tag before. nothing you can really do to make it taste better though
