    Made Venison Chorizo out of Axis

    and it’s delicious!


    Made 25 lbs total. Started out grinding 15 lb venison and 10 lbs bacon ends.

    Then I combined the two meats

    Next I added the seasoning and mixed throughly

    Then grinded it all together and vacuum sealed in 2 lb bags.

    The 1 lb I had left over got mixed with eggs and became breakfast tacos.

    Added cheese street taco sauce to a tortilla along with the chorizo

    Breakfast was served!

    Looks good AC. More like late night beer joint supper. What seasoning you use.

        “Legg’s Fresh Chorizo Sausage Seasoning” is what I used.

        Reo’s brand another great one I’ve used before.

                    Yessir. Reo is the best IMO. Legg’s is a close 2nd. It’s what I had on me and I was hungry.

                      This is exactly how I make mine. 50/50 venison to bacon ends with Leggs Chorizo seasoning. I also add 1 cup apple cider vinegar for every 5lbs of meat

                              Most chorizo recipes call for the vinegar. I don’t like vinegar so I just make it without. I can’t tell a difference in the taste. No idea what’s it’s suppose to do.
