Holy hell is this stuff good! The wife and I have been feasting on the elk I took back in September, and we are both just blown away at how good this meat is. We are averaging 3-4 meals a week of elk. We eat the hamburger meat straight without adding anything, and its surprisingly not that dry. Wife made a roast out of the ham last night and it rivaled any beef roast we've had. Steaks are tender and flavorful. I heard the meat was good, but I wasn't expecting this! Man I want some bad!! I went on my first elk hunt 2 weeks ago in Colorado and couldn't make it happen. The cooks made some fresh elk enchiladas for dinner off a bull that was shot the day before and man they were awesome!!! That was the first time I've had elk and after eating those enchiladas I just wanted any legal bull we could find. Oh well maybe next year.

I shot a cow years ago in New Mexico. Brought my mom some of the steaks. While I was there, she fried some up one night. As I was eating, she asked how the steaks were? I said fine. Then she said it was some of that elk I brought. I was like, Are you kidding me. I thought it was beef she had got at HEB!!!
Yeah, it’s some pretty good stuff!!!
