Gringo Enchiladas

    Gringo Enchiladas

    1 lb. ground meat (your choice)
    5-6 tortillas quartered
    1 can RED enchilada sauce
    1/2 onion chopped
    1 bag mexican blend cheese

    Cook meat in skillet till brown, then add enchilada sauce and simmer. grease 13X9 pan then layer meat, tortillas then cheese. Cook at 450 degrees until cheese melts. Add onions last few minutes then cut and serve.

        I made this You Tube recipe with a homemade enchilada sauce just last week. It was awesome and had a great flavor. My wife wants me to make it again this week. Lots of good recipes on her You Tube site I will be trying in the future.

          I use the HEB enchilada sauce in my stuffed Poblanos. It is really good for a sauce in a can.

              If you will click on the YOUTUBE link on the bottom right-hand corner of the video, it will take you to You Tube where you can see the recipe if you click on "show more" . The whole recipe is listed there. I copied and pasted it for you, but it is listed on the video as well.

              These CHEESE ENCHILADAS are neither genuine Mexican nor totally Texan, they are TexMex style, these corn tortillas are stuffed with cheese and smothered in a delicious homemade sauce made with the best seasonings, then topped with a fresh Pico de Gallo and sides with refried beans and Mexican rice, it is a very easy and quick meal to prepare.

              INGREDIENTS
              2 Tbls melted butter
              1 Tbsp vegetable oil
              3 Tbsp All purpose flour
              1 & 1/2 Tbsp chili powder (I like Gebhardt)
              2 tsp Paprika
              1 tsp onion powder
              2 tsp garlic powder
              1 tsp cumin
              1/2 tsp oregano
              3 C. chicken broth
              2 tsp tomato paste
              1 & 1/2 tsp chicken bouillon
              1/2 tsp sugar
              Corn tortillas
              American cheese (grated as needed) I used about 3/4 lb. but you use as needed for you.
