I smoked one yesterday. Just trim all the sinew and any other membrane away from meat and rub with your favorite seasonings. Smoke it for 1 1/2 - 2hrs with heavy smoke then place in foil and seal it up good. You can finish it up on the smoker or put it in the oven. I personally put it in the oven at 225. Time depends on the size, but when the house starts smelling good I let it cook another hour. When you open up the foil the meat should have pulled away from bone.
I do this with all the shoulders of my deer. It's easy and there is no wasted meat like when I debone it for sausage or burger.Last edited by Richard M.; 03-11-2010, 09:10 AM.
