    Sous vide backstrap wrapped in bacon and covered up with shiitake mushroom and onion pan sauce. (Garlic toast and air fryer French fries)

      Only thing wrong with that is too many taters and not enough meat !

            It was a little tater heavy. Wish I’d have doubled the pan sauce and smothered the fries in that too

                          Cut them on a mandolin slicer and dropped them in a pot of cold water for an hour.
                          Drained the water then covered them in boiling water to par cook for 15 minutes.
                          Dried them good in a salad spinner then paper towels.
                          Coated them lightly with oil and salt. (I actually used bacon lard I had saved)
                          crisscross stacked them in the cold air fryer for max airflow.
                          Set it to 375 for the first 15 minutes then gave them a good stir and cranked it to 400 degrees for another 15 minutes or to your preferred doneness

                          I think they compared to smash burger fries if you've had those.

                            Gunny I think you are onto something with those fries.

                            Smother them in that mushroom onion sauce (I assume made in the same pan the venison was seared in) and you have a Texas Poutine!

                              The best venison meal would not be “wrapped in bacon.”

                              I’m sure there are better ways, and I know there are much better cooks than me, but braised shanks are tough to beat in my opinion.

                              Osso bucco is not not far behind whole shanks in taste and texture.
