          Looks delicious. Always cracks me up when folks say they don't like deer meat when there are so many ways to deliciously prepare it.
          That said there are to many carbs there and not enough protein. And no veggies. Wouldn't be my number one choice. Sorry.

            Agreed. Most folks I know that won't eat venison is because they are hung up mentally about eating wild game.

            I should have thawed a second pack of backstraps for sure and I would normally have a roast vegetable with in in leu of fries but I was just making do with what I had on hand.

                          Mine is dead simple. souse vide 1-1/2 hour at 129 then dry and spray with a little cooking spray then S&P and into a screaming hot skillet for just long enough to put on a good sear (45 seconds per side maybe)

                          The pan sauce is more of a technique than a recipe. Sauté onions, garlic and mushrooms in oil and or butter until they develop some good color. Then deglaze the pan with a little stock or wine and reduce it stirring. season to taste then whisk in butter or cream a little at a time until it'll coat the back of a spoon. adjust the seasoning to taste.

                                I am team grilled deer steak! I'll never fry it again. Here are some reverse seared mule deer tomahawks and some backstrap. I use Chupacabra Wild Game rub and Greenwood's Tree Bark seasoning. Always on point!
