    CornBread Pie

    “CornBread Pie”
    This is a deer camp favorite not heart Dr. Approved
    Take 4 boxes Jiffy cornbread mix and mix together using the required egg and milk measurements for each box. I add diced jalapeños and one can cream style corn and one can regular corn drained to the mixture. Mix well. Then brown 1 # of your favorite breakfast sausage or burger meat. I used some hot venison sausage tonight. Then take one large onion thinly sliced.
    Pour half the mixture into a well greased casserole dish or iron skillet. Then evenly spread the sausage onto the mixture. Then place onions on top of the sausage. Next this is the good part. Take 1/4” thick slices of velvet a cheese and cover the dish with it. Then add the rest of the cornbread mixture on top covering everything. Bake in 350-375 oven covering halfway through with foil to keep top from burning. It will take 30-40 minutes to get done. You can make this before you go out for the evening hunt and have a great meal when you get back. Enjoy

          We do a similar version. We use mexi-corn in the cornbread mix in place of the plain canned corn and then use hamburger meat with taco seasoning instead of breakfast sausage. I cook diced onion and diced bell pepper in with the taco meat. Then top with regular shredded jack cheese.

          It's real good. Even better with a good pot of charro beans.

                              I came home and made a pan of (as we call it) Mexican cornbread tonight. And a pot of beans to go with it.
