                Very nice. Try making a venison or beef pastrami. Super simple and will make you smile from ear to ear.

                  Pellet grills are almost like cheating!!! They are so nice..... Set it and forget it!

                    Pastrami is on the list for sure

                    I ran this one at 225 the whole time

                    8 hours spritzed with ACV and Beef brot

                    Wrapped 3 hours in foil

                    Unwrapped 1 hour to set the bark after being wrapped.

                    Once it probed at 203 it came off.

                          That looks great. Pastrami and bacon were the first thing on my list after I smoke a brisket. You will love it.

                            I'm not so sure about that....I've seen some roasty looking brisket come out without much bark on several pellet smoker pages.....Seems you still have to work at it a bit or use a higher end pellet smoker to get a good looking bark like the OP....


                            Before I jump in, I need to make sure, the one I chose is capable of it. Life is too short to eat roasty brisket.

                              No doubt! I think the bark has more to do with how you finish it, wrap paper or foil, rather than the heat/smoke....
