    Shiner Sausage Fest 2015

    My clan is year two into our return from our Canadian experience. Since this time the farm folks (mom, dad and aunt Elaine) have continued to expand the butchering operation, adding an addition to the shop (man cave - sausage making / woman cave - quilting room). This past year dad built a new smoke house as retired the one my paw paw built many years ago.

    With a mind on the weather and our calendars (boys baseball season) we put last Saturday on the calendar. I took off in Friday and drive down to start the weekend. We would grind and season on Friday, then put back in the walk in cooler and enjoy the Hallettsville Wildgame Supper that night before returning to work on Saturday and Sunday.

    It was a good weekend of hard work mixed in with making memories.

                            Being a old Pollock and having made tons of sausage -I have never seen so much good looking meat and not a cold Shiner sitting on the table

                              That is quite the operation. Very nice job. I have always wanted to be able to make my own sausage but haven't given it a try yet.
