    Last Supper. Yellow Fin Tuna Recipe ?

    Oklahoma season ends Sat so I'm cooking up a "different" type meal than normal for our last night of the season.

    Buddy here at work gave me about 5 lbs of YF Tuna & 2 lbs of BF Tuna.

    It's vacuum sealed, uncut. Straight from the guide service I'd imagine.

    Buddy says to skin it and cut out red meat??? Cut into 1/2" steaks and marinate in a mixture/recipe he gave me. Recipe calls for OJ & Soy Sauce and I'm not real fond of either.

    I'll have a mesquite wood grill to cook it on.

    Where do I start?

    I've never ventured into saltwater much, lol.

    I'll have t-bones for back-up!

    Salt pepper and lemon cut steaks a little thicker 3/4 to 1 inch

      I’m not a big tuna fan, I usually give mine away. Pretty much the only way I’ll eat it is raw or poke. If you grill it you have to make sure you don’t overcook it. You want to sear it no more than a minute or so on each side.

        This recipe right here is the best tuna I’ve ever had.
        I think I messed with quantities of the first step to get it perfect but it’s very good.

        And I cook it medium rare as well

          Slice and dip into soy sauce and get after it. If you gotta cook it, get your fire hot and coat fish in olive oil and season, I like Cajun. Sear it, ~30 seconds per side needs to be rare in the middle; medium rare tops

            Or use whatever recipe in a skillet just sear the outside leaving inside raw. The less you cook it the better it is

                I like to sear on mesquite fire to rare to med rare cook on tuna. Serve with asparagus and pasta with butter, shallot, garlic and caper sauce. Serve tuna on top of pasta with some of the sauce drizzled overtop.

                  Yellowfin- Season and sear.

                  Blackfin- Cook through and shred to use in tuna salad.

                    Let me clarify....

                    I don't eat sushi. I don't like soy sauce. I like beef/venison steaks med/med rare.

                    So with that said....

                    Any BLACKENED Tuna recipes ?

                            If you cook it all the way through you will be highly disappointed in tuna.

                              If you like beef med rare should enjoy tuna med rare. I pan blackened mine in oil with salt n pepper n lime. Quick hot sear rare in the middle. Not sushi no soy sauce needed taste great. If you cook it too much it loses the firmness and gets flaky. Rare is the best way to eat it
