They don’t have worms in the winter. Cotton tail is best. Swamp rabbits fry as OP has done and then smother in gravy for a while and it will be tender.
My Dad raised them by the hundreds when I was a kid. Dressed and carried them to town and sold them or traded them for other things at the grocery stores. Every grocery store in Bonham Tx had fryer rabbits in the produce department. People ate a lot of it back then. 1940's and 50's it was the other white meat. Sweet delicious and tender farm raised fryers was my favorite along with the biscuits and gravy.
Now a good by product of raising rabbits is the fishing worms you grow underneath the coops. Nuttin better for catching any kind of fish. You feed the rabbits and they feed the worms. Work smarter not harder.
