        Agree with tpack, offset smoker with firebox and start with small amount of charcoal then use mesquite for heat and hickory for rich smoke and flavor.

              Depends on what I’m cooking and the time frame I have to cook it in. I use all three

                Char coal, never briquettes. Lump Oak char for main heat, and dried fruitwood cuttings from pruning the Plum and Peach trees for my long smokes. I'd use hickory or pecan for shorter smokes. Sometimes hackberry.

                Grilling, Lump oak char from HEB. And hackberry if needed.
