      Looks good. I do something similar with steak on occasion but haven't thought of cooking a pork chop like this.

          You have never had this pork chop. 7 fingers tall! Smoked and dry-aged. It's amazing

              I have had it and it was definitely in the top 3 of pork chops Ive eaten. Their steaks on the other hand, not so much.
