    Barbacoa (Beef Cheeks)

    Made some Barbacoa today. Picked up some beef cheeks from HEB.
    Now they have to be trimmed up and there is a lot of waist.
    Trimmed then seasoned with HardCore Carnivore Black.
    Put on the smoker at 250 or so for 1.5 hrs. Then into a foil pan with some beef broth for another 1.5 hrs with the foil on the pan. Pulled and chopped like brisket. Made tacos out of it for dinner.

    Good stuff there. You clean it all the way down to just muscle or do you leave any gland tissue?
