Beef stock works fine as well as chicken stock

A pressure cooker would reduce the cooking time for sure but not sure what it might do to the flavor,

Everything I make in the pressure cooker taste like its been cooking all day. Im a fan. For cooking meat and stews, its hard to beat.

Made this receipe Friday night in the pressure cooker. Turned out good. Cooked it too long. Was the most tender pork Ive ever had though. I like my carnitas still cubed, not shredded. You couldn't even pick up a piece without it falling apart, so had to shred. Good stuff though. Cooked it on high pressure for 75 min. That's what I use for pulled pork, so should have known better. Next time will do it for 50-60 min.

Glad yall like the recipe this was my daughters first experience with wild meat when she was younger. Now all she will eat is meat we have shot, won't even eat a high quality steak from my local butcher.
