          2 -3 Tbsp butter unsalted
          2-3 finely chopped green onions
1 jalapeno no seeds finely chopped
Cook these in butter until soft
Add 6 oz tails and cook for 3-4 minutes
Add 1 rounded Tbsp flour and stir until smooth
Add 3/4-1 cup half & half stir until thickened
Add Tony's to taste. Usually 1tsp to 1 Tbsp
Serve this over blacked or grilled fish of choice.

I like the etoufee topped blackened fish Over rice as well. Not a fan of catfish but I fish saltwater so I have much better options for blackened fish.
