    I've shot them all over, deboned and cooled quickly, trying to keep the hair off the meat and it delicious. One of our favorite critters hands down.

      New Mexico might be good tasting meat. My FIL in Wyoming would have the whole thing made into jerky. He said the meat had such a strong sage taste it was not good for anything else. I will say the jerky was awesome.
