My I enchest full of I e stayed frozen, but all the bones I’d save for my homemade broth were not.
Can anyone help me understand why

If it was warm when you put it in bags the heat was retained in the middle of the chili.
The chile roasting folks always tell us to allow our bags of roasted chile to cool before trying to freeze. They will retain heat in the middle and spoil.
I always take the lid off or crack the lid on a warm pot of food when it goes into the frig, cold circulates into the pot that way, lid keeps it insulated from the cold.
