Bone in venison neck roast

    Bone in venison neck roast

    Injected with:
    1 stick butter
    1 table spoon bacon grease
    1/2 cup beef broth
    3 Tbl spoons sweet rub o’mine

    Rubbed with:
    Sweet rub o’mine

    Rested in fridge for 5 hrs

    Rested on counter 1 hr

    Few pieces of bacon on top for good measure.

    Smoke over mesquite at 225 for 5 hrs then in the crock pot with onion and beef broth for 5 hrs.

    Shred and serve on a bun with coleslaw with a side of baked beans for Easter.

    I’ll let you know how it comes out.

    It certainly looks good....I cut what I can off of the neck go be ground. Never tried anything else with it.

        That is a lot of work to make something taste good. Sure is purty.

          Neck roasts are probably the best roast cut on the deer. Looks great!

              I’ll take a bone in neck roast over a shoulder any day.

              Not any more work than I would put into a pork but.

                Changed plans due to over estimating the size of my crockpot. Not the first time that happened.

                Placed roast in large roasting pan after smoking.
                2 sliced white onions
                2 cloves garlic
                1 cup beef broth
                1 handful dried porcini mushrooms

                Cooked at 225 for 6 hours, left it in oven for 5 hours resting before I pulled and chopped it.

                Taste great and shredded easily once sliced.
                All the connective tissue melted like butter.

                            neck roasts like said above are probably the best cut on a deer to do a roast with. all that fat, collagen, sinew, tendon stuff melt away and really make it incredibly delicious. WAYYY better than shoulder or rump roasts IMO.
