30 min meal on the camp fire

Piscado el Vapor, or something like that.

30 min from hook to plate

    Right out the river.

Chopolti spice, lines, red onions, jalapeƱos, needed mushrooms and green peppers

I've always wanted to grill fish straight out of the water. We've fried plenty of fresh but usually use frozen to grill.

You may want to clean them first.

Fresh fish is always better and I will rarely ever eat fish that has been frozen but that's probably because most of the fish I've ever ate was fresh.

My favorite when camping is grilled salmon with a thin layer of horse radish sauce over the top. Perfect side dish is sliced potatoes with onions, garlic salt and butter wrapped in foil cooked over the coals. Used to have this a few times every spring and fall when the salmon were running as I grew up on the river but we would go camp way down stream because the salmon are much fresher down stream.
