HEB Texas style beef ribs

I slice them into strips, season, grill, then finish them with onion and peppers in a skillet. Excellent fajitas!

Our HEB never has the good ones. They either have just the bones with next to no meat left or they have "Boneless Texas Style Beef Ribs". How the heck do you have a boneless rib?
