In regards to pellet grills I’ve always been told or read you couldn’t get that pink ring or bark on whatever you were cooking.

I’m no expert on it but have been able to achieve the bark that My family prefers on my brisket/ribs etc.

I love my easy bake Pitt Boss on weekends like this last one with rain showers off and on. I have water standing all around my stick smoker. Fired up the Pitt Boss and cooked away.
