    Pollo..... Something Spanish

    I can't speak Spanish

    First I apologize for the plated pic, I was as hungry as a hostage and didn't think it would have turned out this good!!!

    Simple and takes about 40 min. This was cooked on the fly, so ingredients were by instinct.

    Pre heat oven to 400..... Or light grill

    While preheating, slice
    1 large onion
    1 large bell pepper
    Large handful of porta Bella mushrooms
    5-6 small cherry tomatoes
    5-6 small... Or 1-2 large jap. Peppers.

    Also prep chicken breast.... That's the pollo ( all I know in Spanish )
    I used the Walmart packaged breast that come 5-6 in a yellow flat. They are thick so I butterfly them to greatly reduce cooking time.

    Season breast- I use 7 season (salt grass steak seasoning) and place on rack then place rack on cookie sheet with foil so as not to just cook in its own fat... Or use the grill. I cook for 40 min @ 400

    At about 20 minutes in, heat skillet ( I prefer cast iron) with a T or so or olive oil and add veggies. Cover and stir occasionally.

    Half way through veggies I add a fajita seasoning and about 1/4 a bunch of cilantro and finish until onions are transparent.

    Plate chicken beast, add light sprinkle of matzarella shredded cheese, top with veggies, cover with more cheese while hot enough to melt. Then a small dash of 7 season on top

    That looks really tasty!!

    To save time, sometimes I use Tyson pre cooked chicken. Works pertty well in saving time on those days when I am running against the clock. I will have to try it with your recipe.

            My wife had an intern that is going back to Connecticut to school tomorrow come over to eat tonight and requested this... Did it on grill this time, even better

                          I like to filet the breast to him them out... But you don't have to.

                          I season the great with seven season and grill 15 min per side flipping once @ 400. Still do the onion and other sautéed stuff in cast iron on stove top.
