I have seen buzzars on deer a couple hours after they had been shot.

Look for daddy long leg spiders they will be attracted to the blood drops

Buzzard find food by sight and smell, with a gut wound and heat of day the scent will be rising. Had them find a doe I shot one time in less than 30 mins...so just depends. I shot a red stag one time and it took 3 days for him to die from gut/one lung shot. So its possible he's not even dead yet. Got to admit never heard of whitetail lasting that long though.

Bet you already walked by him, just didn't see em. Look in the thickest stuff close to where you saw last blood. If mortally wounded, and can't keep moving, he will try to hide in the thickest stuff possible.
