Brisket hit the pit at 0910 hrs this morning. No idea what I’m doing but giving it hell.

Started desk yesterday. Almost done with the rough finish. Plan on adding Formica to it. Nothing fancy.

I measure the brisket every 1 hr and adjust my temperature according to it’s calculated mass to ensure constant even cooking.

Love the kreg jig. Not that anything I do is high quality but it makes things look nicer and it’s worth it’s money alone in easy of use
