    San Antonio Deer Processing

    Where does everyone go to get their deer meat processed in San Antonio and surrounding area?

    The big 3 I've heard most about (some good, some bad) are Granzin's in New Braunfels, Schott's in Helotes, and Dziuk's in Castroville. Anyone tried all 3?

    Open to others as well...

    Schotts just opened up
    A New Location over by Alamo Ranch. Mike Schott does great work on deer processing.

      When I’ve gotten lazy and didn’t want to mess with one, I’ve taken to Ottea’s. Been happy with what I got from them. Took a hog there Sunday, it was 69lbs. I wanted back strap whole and 10lbs of hot links. Got a call last night that they didn’t have it marked down what I wanted with the rest and I had 11lbs of trim left. Just told them to grind it. They’ve stepped up their game in the last couple years in my opinion.

        Presa locker plant does good work. Just sout of downtown. And p
        Penshorns in Marion. Penshorns makes good link sausage.

              I have used all 3 of those. Just had elk sausage made at granzin’s. I live in Boerne so Klein’s does most of mine.
              I will give you what are my favorites.
              Klein’s smokehaus for jap/cheese fresh sausage and chopped steaks. They also do tenderized cutlets we use for stir fry and chicken fried steak.
              Granzins for summer sausage.
              Trophy Buck in Lytle for dry sausage and buck sticks. They use chili pequin and pepper jack cheese.
              Schotts does a good job with chili pequin sausage as well.

                            When he was building the first location, he still processed our meat.
